Long before industrial shortcuts became the norm, treats were made with real flour, real sweeteners, real fat. Somewhere along the way, corn syrup replaced honey, dyes replaced fruit and root, and “convenient” replaced “wholesome.”

Candy Khota’d exists to bring that back — not as a throwback, but as a standard. Heirloom wheat berry and einkorn flours. Tapioca syrup. Grass-fed gelatin. Natural color and flavor. Chocolate sourced from Raaka and Pascha. Every ingredient chosen because it belongs, not because it’s cheap or shelf-stable.

Every recipe begins long before we step into the kitchen.

It begins with the farmers who grow the grain, the makers who craft exceptional ingredients, and the belief that food should be as honest as the people sharing it.

That’s why we don’t simply talk about “clean labels.”

It means choosing heirloom wheat berries and milling them fresh for our cake pops. It means using grass-fed gelatin, tapioca syrup, and natural, fat-based colors instead of processed shortcuts. It means partnering with farmers and makers we know by name.

We don’t choose ingredients based solely on a specification sheet. We choose partners who share our commitment to quality, craftsmanship, and doing things the right way. Knowing where our ingredients come from—and the people behind them—is just as important as knowing what goes into every recipe.

If we can’t trace where an ingredient comes from—or feel proud to serve it to our own family—it doesn’t belong in our recipes.

  • Real Food Colors

    Pink from strawberries and hibiscus, violet from blueberries, green from ceremonial-grade matcha. Never artificial dyes. Never Red 40.

  • Better Sweeteners

    We sweeten with raw local honey, pure Grade A maple syrup, and coconut sugar—not corn syrup or imitation sweeteners.

  • Heritage Grains

    Our cookie fries are baked with ancient-grain einkorn, and our cake pops are made with freshly ground heirloom wheat berry flour.

  • Made-From-Scratch Marshmallow

    Khota’s Krispie Crunch and our marshmallows begin with our own handcrafted marshmallow base made with real grass-fed butter, browned low and slow.

  • Premium Chocolate

    Our chocolate is peanut-free, tree nut-free, and soy-free per the manufacturer — plus gluten-free, non-GMO, kosher, and made in America.

  • No Peanut Ingredients

    Our recipes never include peanut ingredients, and we clearly identify tree nut flavors so you can choose what’s right for your family.

  • The Original Wheat · 12,000 Years

    Einkorn

    Triticum monococcum — the first wheat ever farmed

    In our Einkorn Cookie Line

    The most ancient wheat we bake with — never hybridized, still close to its wild form.

    • More protein. Einkorn can run notably higher in protein than modern wheat, with more of a naturally balanced nutrient profile.
    • Golden with antioxidants. Rich in lutein and carotenoids — the same compounds that give the flour its buttery-gold color.
    • A simpler grain. Just two sets of chromosomes vs. modern wheat's six, so it's never been engineered for industrial yield.
    • Gentler for some. Its different gluten structure is easier on some people's digestion — though it is not gluten-free.

  • Heritage Soft White · Since the 1600s

    White Sonora

    One of North America's oldest grain varieties

    A heritage soft white wheat prized by artisan bakers for tenderness and taste.

    • Naturally sweet & buttery. A soft, low-protein wheat with a delicate, nutty-sweet flavor bakers celebrate in pastry.
    • Tender crumb. Its gentle gluten structure gives a light, airy texture — exactly what a great cake pop needs.
    • Grown, not engineered. A drought-tolerant heritage grain revived through local food and heritage-grain movements.
    • Whole-grain goodness. Milled whole, it keeps the bran and germ that refined white flour leaves behind.

  • Ancient Grain · 8,000 Years

    Spelt

    Triticum spelta — an ancient cousin of modern wheat

    In our Cinnamon Rolls & Milk Bread

    A hulled ancient grain that's kept its pure form — never crossbred for yield.

    • Fiber-rich. Whole-grain spelt is a strong source of dietary fiber that supports digestion and steadier energy.
    • More protein & minerals. Tends to carry a bit more protein plus minerals like zinc and magnesium than standard wheat flour.
    • A gentler gluten. Its gluten is more fragile and water-soluble, which some people with mild sensitivities find easier to digest.
    • Nutty & sweet. A mellow, nutty depth that makes soft milk bread and cinnamon rolls taste like more.

    We choose the right heritage grain for each treat — not the cheapest flour on the market.

    • Einkorn for our cookies — the original wheat, higher in protein and antioxidants.
    • White Sonora for our cake pops — soft, sweet, and tender-crumbed.
    • Spelt for our cinnamon rolls & milk bread — nutty, fiber-rich, gentler gluten.
    • Never hybridized for yield. These grains stay close to how our ancestors grew them — chosen for flavor and nourishment first.
